Deep chilled turkey

Deep chilled is a controlled temperature process used in the poultry industry to preserve freshness and quality without the turkey being frozen. The turkey may feel firm or slightly icy to the touch but this is just a safe food handling measure. The turkey will soften in your fridge. This is one of the reasons our turkeys are tender and juicy. Please inquire with further questions regarding this process.

How to roast a turkey

We estimate 20 minutes per pound in a 350° oven.

Step 1: Place 1″ water in bottom of roasting pan, along with neck and giblets (if desired).

Step 2: Place aluminum foil tent with holes in it over the turkey. We highly recommend using a meat thermometer. Put thermometer in the heaviest part of the thigh.

Step 3: Check turkey every hour to hour and a half, basting and adding water to pan, if needed. When the temperature reaches 170°, remove foil to brown. When the turkey reaches 180°, it is done.
